Pumpkin Pie... for Tasha :)
1 (8-ounce) package cream cheese, softened
2 cups canned pumpkin, mashed 1 cup sugar 1/4 teaspoon salt 2 eggs, slightly beaten 1 cup milk or half-and-half 1/4 cup (1/2 stick) melted butter 1 teaspoon vanilla extract 1/2 teaspoon ground cinnamon 1/4 teaspoon ground ginger, optional 2 pieces pre-made pie dough Whipped cream, for topping Preheat the oven to 350 degrees F. For the filling, in a large mixing bowl, beat the cream cheese with a hand mixer. Add the pumpkin and beat until combined. Add the sugar and salt, and beat until combined. Add the eggs, milk or half-and-half, and melted butter, and beat until combined. Finally, add the vanilla, cinnamon, and ginger, if using, and beat until incorporated. Set aside. Place 1 piece of pre-made pie dough down into a (9-inch) pie pan and press down along the bottom and all sides. From the second piece of pre-made pie dough, cut out the largest tire shape possible that is 2 inches in width. Position the tire around the edge of the pan, and then pinch and crimp the edges together to make a pretty pattern. Pour the filling into the prepared pie crust and bake for 50 minutes, or until a knife inserted in the center comes out clean. Place the pie on a wire rack and cool to room temperature. Oh I have been having mine and your share of those gingerbread latte's... also have some pumpkin spice creamer for those days that I don't want to leave the house... YUMMMMMMM!!!!!

My little sis makes the yummerliciously bestest "pumkin roll". It's a kind of pumkin/spice bread cooked in a thin sheet then liberally smeared with a sweetened cream cheese filling and rolled up and sliced.
It's addictive. I'm tryin to get thru on the phone to her to have her give me the particulars on the makins. -Mac |
