Pumpkin Roll recipie

I know I'm a bit late on this, pumpkin usually being associated with Thanksgiving and all..but I just got the dang recipie from my sister today.


Pumpkin Roll

Cake Mix

1 cup sugar
3/4 cup flour
1 tsp. baking soda
1 tsp. cinnamon
2/3 cup pumpkin
4 eggs

Mix and pour into wax paper lined cookie sheet (spray the wax paper with PAM*)
Bake @ 350 for about 10 minutes. Take wax papered cake out of pan and put on towel to cool for 10 minutes. Liberally sprinkle powdered sugar on a towel and turn cake over on it. Pull off the wax paper.

Filling

1 cup powdered sugar
8 oz cream cheese
1/2 cup walnuts (optional)
2 tsp butter
1 tsp vanilla

Mix together and spread on cake. Make sure you spread filling to the edges of the cake. Using towel, roll cake and put in foil and put in fridge for at least 2 hours to setup or double wrap in plastic and freeze.

Cut into approx 1/2 inch slices and serve while still chilled.

I thought that might confuzed you foriegn deeveel type folk.

PAM is a trademarked brand of arisolized cooking oil. It's basically olive oil in a spray can. It's used when you only need a light coating of oil on a surface.

Any spray on cooking oil will work.

We have our own version of PAM but it's called something more sensible - Fry Light!
