South of the Border Burgers

From Fast Entrées (Ten Speed Press, $17.95 paperback).

2 pounds ground beef
1/4 cup chopped cilantro sprigs
4 garlic cloves, minced
2 to 3 serrano chiles, minced with seeds
1 cup shredded sharp Cheddar cheese
1 teaspoon ground cumin
1/2 teaspoon salt
4 hamburger buns
Tomato slices
Lettuce
Homemade or store-bought salsa
Homemade or store-bought guacamole

Place beef in a bowl and add cilantro, garlic, chiles, cheese, cumin and salt. Mix thoroughly. Divide evenly into 4 balls; flatten each gently with palm. Do not overcompact. Cook on grill or in cast-iron skillet, turning once. While burgers cook, toast buns. Place burgers on buns and serve immediately with tomatoes, lettuce, salsa and guacamole.
